This gorgeous book has just been released onto our streets, It is a lagre hardback that demands your attention. From Anness publishing it really is the Ultimate Cheese book. The author Paul Thomas must be the go to man in the cheese world. While we were shooting this book he was getting calls every day from dairies needing his help and advice. He is on the European advisory board for bacteria in cheese!
Our mission was to create the most complete guide to making your own cheese at home. This was very complicated. We needed a white board and lots of coloured pens just to keep track of where we were with each cheese. Different aprons, surfaces etc etc. Then we had to come back 6 weks later to see how they had matured. Some better than other it has to be said.
I also toured England visiting other dairies and chees shops to get the background details needed. It made for a lovely few months. Yes we did smell a bit and did fry our brains. We needed to both super organised to stay one step ahead. It would have been easy to lose our way and drown under a mass of starters and cultures and milk.
The result though is suprising. For such a complex and scientific subject we have made it look beautiful. Even the steps are a joy to look at. I like to think we have advanced the way step photography is shot. Not hist on a plain background all in focus. But in a more lifestyle artistic way. If you ever fancy making cheese this is the book for you. But it is quite difficult and a lot of it depends on the maturing of the young cheeses. many a good cheese dies on the way to maturity!!
